Continuous Mixer. (a) Any of several dough mixer designs in which the function of dough mixing (q.v.) and development (q.v.) are performed on a continuous basis, usually at high speed, and in which use is generally made of liquid ferments (q.v.), with the required dough ingredients being proportionally fed into the unit. (b) Continuous cake batter (q.v.) mixer of two basic designs, one with a compact mixing head consisting of a high-speed rotor positioned between fixed stators, and the other consisting of a cylindrical heat exchanger (q.v.) equipped with a rotating central shaft to which appropriate mixing blades are attached.
