Convection Oven

Convection Oven. An oven in which heat transmission from the heat source to the baking product is achieved either by free convection (q.v.) or, more efficiently and rapidly, by forced convection (q.v.) that is produced with the aid of fans or blowers. Forced convection greatly improves the uniformity of bake and is, for this reason, applied in nearly all modern ovens.
