Cross-Grain Moulder

Cross-Grain Moulder. A moulder (q.v.) in which the conveyor feeding the curling section (q.v.) travels at right angle to the sheeting rollers (q.v.) so that the sheeted dough piece enters the curling section sideways, a fact that contributes to a desirable elongated cell structure (q.v.) in the crumb (q.v.) of the baked loaf.
