Crumb Color

Crumb Color. The color of the crumb (q.v.) of bread (q.v.) or cake (q.v.). Its character should be uniform and conform as closely as possible to the ideal color associated with the specific product, i.e., a pure white in white bread (q.v.), white cake (q.v.) and angel food cake (q.v.), a rich yellow in pound cake (q.v.), etc.
