Cutting. (a) The act of slitting the top surface of a moulded dough piece for certain specialty breads (q.v.), either before or after final proof (q.v.), to control the bursting (q.v.) of the loaf or to impart a desired appearance to the baked product. (b) The reduction, or cut, in a bakery's production order by the sales department after the day's production schedule has been established.
