Dairy Products. Milk (q.v.) and milk-derived products that find extensive use in many bakery products include, among others, cream (q.v.), buttermilk (q.v.), evaporated and concentrated milks (q.v.), nonfat or skim milk (q.v.), caseinates (q.v.), and whey products (q.v.), in both liquid and dry forms. Butter (q.v.), while obtained from milk, is not generally counted among dairy products but is rather assigned to the category of fats or shortenings (q.v.).
