Dairy-Based Blend. A dry mixture of dairy products (q.v.), especially dry whey (q.v.) and nonfat dry milk solids (q.v.), combined with such other food products as corn and soybean flours (q.v.), soybean protein concentrates (q.v.), and soybean protein isolates (q.v.), that have been formulated into a blend to serve as a replacement ingredient for nonfat dry milk in bakery products and to improve the latter's nutritive value.
