Defatted Soybean Flour. A finely granulated product obtained by grinding hulled (q.v.) soybeans (q.v.) after oil (q.v.) extraction. It contains less than 1% oil and a protein content (q.v.) of approximately 53% Soybean proteins possess a high biological value (q.v.) and find increasing use in the formulation of dairy-based blends (q.v.).
