Degasser. A dough pump of variable design, serving a dual purpose: (a) to transfer mixed dough from the dough trough (q.v.) to the divider (q.v.) hopper (q v.), and (b) to expel in the process most of the dough's carbon dioxide gas (q.v.) and thereby impart to the dough a more constant density (q.v.) that yields more accurate and uniform scaling weights and such additional benefits as improved pan flow (q.v.), enhanced grain (q.v.) and texture (q.v.) in the baked product, and greater ease of processing.
