Diacetyl

Diacetyl. A compound with the chemical formula CH3COCOCH3 that occurs in butter (q.v.) and some aromatic foods. It is formed in bread in trace amounts by the oxidation (q.v.) of acetylmethyl carbinol that is produced as a by-product of yeast fermentation, and it is a major factor in the characteristic flavor of fresh bread.
