Divider. A machine that divides bulk dough volumetrically into individual dough pieces that conform as closely as possible to a predetermined weight. In its operation, the dough flows by gravity from a superimposed hopper into a compression chamber (q.v). It is then forced by ram pressure into individual adjustable dough pockets within the division box. The individual dough pieces are cut off from the bulk, and then ejected onto a take-away conveyor (q.v.). Dough dividing is also referred to as dough scaling.
