Double-Bowl Dough Mixer

Double-Bowl Dough Mixer. A horizontal dough mixer (q.v.) of recent origin with two adjacent and interconnected mixing bowls, each with its own set of agitators (q.v.). The first bowl serves to incorporate and hydrate (q.v.) the dough ingredients, with full dough development (q.v.) taking place in the second bowl. The two bowls are separated by a gate and each set of agitators is powered by separate motors.
