Doughnut. A ring-shaped piece of sweet pastry that has been cooked in deep frying fat (q.v.) to a rich brown color. Two basic types are produced: (a) Cake doughnut (q.v.) made from chemically-leavened (q.v.) cake batter (q.v.) and, (b) yeast-raised doughnut (q.v.) produced from a fermented sweet dough (q.v.).
