Dried Whey. The spray-dried (q.v.) solids of milk serum (q.v.) that remains as a by-product (q.v.) of cheesemaking and retains most of the lactose (q.v) and noncasein proteins (q.v.) of milk. It is available as either sweet or acid whey (q.v.), depending on the method of cheesemaking employed, and in either form contains over 67% of lactose (q.v.) and 12% of milk protein (q.v.).
