Dusting

Dusting. The practice of applying a thin coating of corn starch (q.v.), wheat flour (q.v.), or cornmeal (q.v.) to dough surfaces, generally during makeup (q.v.) operations, such as rounding (q.v.), sheeting (q.v.) and moulding (q.v.), to prevent raw doughs from sticking to equipment surfaces.
