Embosser. In the cookie moulding machine, it is the cylinder, made of brass, bronze, or stainless steel that has engraved in its surface die (q.v.) cavities that impart the shape to the individual cookies. The cookie dough is pressed into the die cavities by a roller and then extracted by a canvas belt and transferred onto the oven band (q.v.) for baking.
