Endosperm

Endosperm. The nutritive and energy-rich portion of the plant seed from which the developing embryo (q.v.) derives its sustenance. In wheat (q.v.), it makes up some 85% of the whole kernel, is composed largely of starch (q.v.) and some protein (q.v.) and represents the primary source of the flour obtained in milling (q.v.).
