English Muffin. A round yeast-fermented dough product, roughly 4 inches in diameter and 1 inch in height, that is baked to a pale brown color on both sides in a griddle (q.v.) oven. Made from a high absorption dough, it is chewy in texture (q.v.), has an open grain (q.v.) and possesses a relatively bland, though slightly sour, flavor.
