Fat Replacer. A food ingredient, generally a carbohydrate in nature, such as a maltodextrin (q.v.) or modified starch (q.v.), with or without additional modifying adjuncts, which, when incorporated into a bakery product, simulates the functions and sensory impressions of fat (q.v.), but without contributing the latter's high calorie content (q.v.) or raising the level of saturated fatty acids (q.v.).
