Flour Color

Flour Color. The degree and purity of whiteness exhibited by white flour which is in part indicative of the flour grade (q.v.), the effectiveness of flour bleaching (q.v.), and fineness of grind. It is generally measured by photoelectric color meters, among which the Kent-Jones and Martin flour grader (q.v.) and the Agtron colorimeter (q.v.) are the most widely used.
