Flour Stream

Flour Stream. In flour milling (q.v.), the individual product fractions produced by the break (q.v.) and reduction (q.v.) operations, with each fraction being derived from a different portion of the cereal endosperm (q.v.) and, therefore, having different protein (q.v.), ash (q.v.), bran (q.v.), and germ particle (q.v.) contents. Ultimately, the individual flour streams are blended in different proportions to yield the desired commercial flour grade (q.v.).
