Folding

Folding. A laminating (q.v.) process in which a thin dough sheet (q.v.), covered either totally or partially with a thin layer of fat (q.v.), is folded and sheeted repeatedly to produce a multilayered alternating fat-dough sheet suitable for making products with a flaky structure, such as croissants (q.v.) and Danish pastry (q.v.).
