Fork Splitting. A common procedure for splitting an English muffin (q.v.) horizontally into two flat halves. After cooling and prior to packaging, the product is partially split by tines (q.v.) inserted horizontally into its sides, rather than sliced (q.v.), to preserve the traditional rough and irregular surface when the halves are pulled apart as this enhances the toasting (q.v.) characteristics of the product.
