Foxy Crust

Foxy Crust. A bread crust (q.v.) with a predominantly foxy-red coloration acquired during baking and caused by an excess of residual sugars (q.v.), especially lactose (q.v.) derived from dairy-based ingredients (q.v.), that remain unfermented in the dough (q.v.). Consumers generally find such a crust color unappealing.
