Freezer Burn
Freezer Burn. An undesirable change in the surface layer of frozen doughs (q.v.) that is caused by moisture migration (q.v.) within the product during the freezing process. It results in discoloration, drying, and other alterations of the product surface and may be alleviated by appropriate packaging and closer control of freezing and freezer storage temperatures.
