Fruit Pie. A relatively shallow, circular food article of variable size, generally with special top and bottom crusts (q.v.) that enclose a fruit and fruit juice filling, as apple, cherry, blueberry, etc., with the juice usually thickened with modified corn starch (q.v.) or waxy maize starch (q.v.) and stabilized with hydrocolloids (q.v.), such as alginates (q.v.), carrageenans (q.v.), and various plant gums (q.v.).
