Fungal Protease

Fungal Protease. A proteolytic enzyme (q.v.) whose source is the mold Asper-gillus oryzae (q.v.) and which is available in powdered preparations or in tablets at standardized concentrations. The enzyme is normally used with strong flours (q.v.) and is generally added to the sponge (q.v.) rather than the final dough.
