Fungistat. Any substance that inhibits the growth of fungi (q.v.) or molds (q.v.) rather than destroys them as does a fungicide. Known also as mold inhibitors (q.v.), this group includes such substances as sodium diacetate (q.v.), calcium propionate (q.v.), and sodium propionate (q.v.), which are used extensively as suppressants of mold growth in bread and other bakery products.
