Galactose

Galactose. A simple reducing sugar (q.v.) which, when linked to dextrose (q.v.), makes up lactose (q.v.), or milk sugar. In souring milk (q.v.), galactose, a hexose (q.v.), is converted by certain bacteria into lactic acid (q.v.) which imparts the characteristic sour taste and odor to milk.
