Gassing Power

Gassing Power. A measure of the capability of yeast (q.v.) to generate carbon dioxide (q.v.) from fermentable sugars (q.v.). It is influenced by such factors as dough temperature, pH (q.v.), alcohol (q.v.) concentration, nature of carbohydrate (q.v.) supply, osmotic pressure (q.v.), and yeast concentration.
