Globulin

Globulin. A group of simple proteins that resemble albumin (q.v.) and are found in both plant and animal tissues, common examples being lactoglobulin of milk (q.v.), ovoglobulin of egg white (q.v.), and edestin of wheat (q.v.) and other cereals. It is water-insoluble and heat-coagulable.
