Glycerol Monostearate (GMS)

Glycerol Monostearate (GMS). A monoglyceride (q.v.) consisting of glycerol (q.v.) esterified to one stearic acid (q.v.) radical. It is a surfactant (q.v.) that finds use in baking as an emulsion stabilizer (q.v.) and as a crumb softening (q.v.) agent in bread (q.v.) and cake (q.v.) products.
