Gum Guaiac. The resinous exudate obtained from the tropical tree Guaiacum officinale, it acts as an antioxidant (q.v.) because of its phenolic (q.v.) components. It is not readily soluble in fat (q.v.) and must be introduced by means of a solvent (q.v.), such as acetic acid (q.v.), if it is to serve as a preserving agent.
