High Speed Mixer

High Speed Mixer. A designation formerly limited to horizontal dough mixers (q.v.) with maximum bowl capacities of up to 2,500 lb of dough whose dual-speed agitators operate at speeds of 20/40 rpm to 50/100 rpm. Mixers with much higher mixing speeds that process smaller batches of dough in shorter times for equal or greater hourly throughput are now available (See also High-Intensity Mixer)
