Honey. A natural syrup (q.v.) produced by bees that closely resembles high-fructose corn syrup (q.v.) in its composition. Depending on its primary floral source, it varies in color from white to dark amber, in flavor from mild and fragrant to strong and pungent, and in composition from a dextrose: fructose ratio of 1:1.55 to 1:1.01. Amber honey, on an average, will contain 38% fructose (q.v.), 31% dextrose (q.v.), 7.3% maltose (q.v.), 1.3% sucrose (q.v.), and 1.5% higher sugars as its main components.
