Humectant

Humectant. A substance that absorbs or retains moisture (q.v.) or imparts that capability to other materials. Glycerol (q.v.), honey (q.v.), and hydrocolloids (q.v.) all function in this manner and are for this reason widely used in products, such as icings (q.v.), fillings (q.v.), soft cookies (q.v.), etc., that need to maintain their soft texture (q.v.).
