Hydroxypropyl Methylcellulose

Hydroxypropyl Methylcellulose. A hygroscopic (q.v.) gum (q.v.) used to control the moisture balance and prevent syneresis (q.v.) in icings (q.v.), coatings (q.v.), and similar products. It is derived from cellulose (q.v.) by reaction with propylene oxide and methylchloride.
