Icing Base

Icing Base. A commercially-formulated stabilizer (q.v.) mixture that contains a balanced blend of gums (q.v.) and other additives (q.v.) and is available either as a paste (q.v.) or as a dry, free-flowing powder, and in various strengths, to be added to the bulk icing at levels ranging from 1 to 10% based on the icing's sugar content.
