Indirect-Fired Oven. An oven (q.v.) in which the fuel combustion chambers are separate from the baking chamber (q.v.), the latter being heated by banks of radiators (q.v.) or tubes or flues (q.v.) through which hot combustion gases being produced by the burners (q.v.) are circulated. Heat transfer (q.v.) is accomplished by both radiation (q.v.) and either free or forced convection (q.v).
