Iron. A nutrient element that must be added at prescribed levels to enriched flour (q.v.) and enriched bread (q.v.) in the form of various salts. The most commonly used forms include ferric orthophosphate (q.v.), sodium iron pyrophosphate, ferrous sulfate (q.v.) and reduced iron (q.v.). These iron forms vary in their solubility and bioavailability.
