Jacket. A term applied to the double-wall enclosure of bowls and kettles of various types for the purpose of temperature regulation. By circulating either a refrigerant (q.v.) or hot water or steam through the jacket, the contents of the bowl or kettle may be either cooled or heated as desired. Practically all high-volume dough mixers (q.v.) have their mixer bowl (q.v.) jacketed for temperature control.
