Kaiser Roll

Kaiser Roll. A round, hard-crusted roll (q.v.), made of unsweetened dough (q.v.), originally shaped by hand by folding the four corners of a square, flattened dough piece toward the center to simulate the form of an emperor's crown, but now formed by a stamping machine that imparts a star impression on the rounded dough piece prior to the final proof (q.v.).
