Leathery Crust. A crust (q.v.) on a baked product that has a tough and rubbery character instead of being crisp or brittle. This condition may result from excessive humidity in the oven (q.v.), or improper post-baking treatment, as wrapping in a vapor-impermeable packaging film (q.v.) that prevents moisture from escaping from the crust.
