Lemon

Lemon. The yellow, acidy fruit of the citrus tree Citrus limonia. Its juice is a major source of citric acid (q.v.). The fruit is rich in vitamin C (q.v.) and its rind, which contains the fragrant oil of lemon, is often candied (q.v.) for use as a flavoring material in various sweet dough products (q.v.).
