Limit Dextrinase

Limit Dextrinase. The enzyme isoamylase (q.v.) that splits the ?-1,6 linkages in amylopectin (q.v.) to produce a more complete hydrolysis (q.v.) of branched carbohydrates (q.v.). It occurs in malt (q.v.) and in fungal amylase (q.v.) preparations.
