Lintner Value. An expression of the ?-amylase (q.v.) activity of malt (q.v.) as determined by the Lintner method (q.v.) which measures the quantity of maltose (q.v.) produced by the malt acting on soluble starch (q.v.) under standardized temperature, concentration and pH conditions. Lintner values of less than 30¦L indicate low enzyme (q.v.) activity, values of 30¦L to 60¦L medium activity, and values above 70¦L high activity.
