Liquid Sponge Mixer
Liquid Sponge Mixer. An equipment unit of variable design that consists essentially of a small flow-through mixer (q.v.) into which the required liquid sponge ingredients, such as flour (q.v.), water (q.v.), yeast (q.v.), etc., are metered and vigorously agitated, and the mixture then transferred continuously into a bulk fermentation (q.v.) tank.
