Locust Bean Gum
Locust Bean Gum. Known also as carob gum, it is extracted from the seeds of the locust bean (q.v.). Only moderately soluble in cold water, it swells readily in hot water to produce a viscous sol (q.v.) that imparts elasticity (q.v.) to icings (q.v.), fillings (q.v.) and batters (q.v.).
