Low-Calorie Bread. Bread (q.v.) products whose calorie (q.v.) content has been reduced by the use of indigestible or noncaloric (q.v.) materials, such as food grade fiber (q.v.) and certain gums (q.v.) that permit an increase in water absorption (q.v.). Legally, a bread for which the claim of low-calorie is made cannot exceed 40 calories (q.v.) per slice (q.v.).
