Low-Calorie Cake. Cake in which the calorie (q.v.) content has been markedly reduced by such formula (q.v.) adjustments as replacement of the shortening (q.v.) with a minimum amount of surfactants (q.v.), substitution of sucrose (q.v.) by lower levels of fructose (q.v.), increase of the moisture content, as well as other compensating adjustments.
